Casa Fiesta Chipotle Chicken Tacos

Ingredients

  • 2 7 oz cans  Casa Fiesta Chipotle Peppers in Adobo Sauce
  • 1 can  Chicken Broth
  • 1/2 cup  Honey
  • 2 tbsp  Gound Cumin
  • 1 lb  Boneless, Skinless, Chicken Breast or Thighs
  • 1 8 oz pkg  Soft Flour Tortillas
  • 1 8 oz jar  Casa Fiesta Salsa
  • 1 8 oz pkg  Shredded Lettuce
  • 2   Tomatoes, diced
  • 1 16 oz container  Sour Cream
  • 1 cup  Shredded Mexican Cheese

Directions

  1. In a blender, combine the chipotle peppers in adobo sauce, chicken broth, honey and cumin.
  2. Blend on high speed for 30 seconds or until the peppers are blended thoroughly.
  3. Pour the mixture into a gallon storage bag and add the chicken breasts or thighs.
  4. Marinate for 30 minutes.
  5. After marinating, grill the chicken until the internal temperature has reached 165 degrees F or the juices run clear.
  6. Slice thinly or cube the chicken and set aside.
  7. Warm the tortillas on the grill or in the oven and assemble the tacos by placing the chicken in the tortilla and adding the Casa Fiesta Salsa, lettuce, tomatoes, sour cream, and Mexican Cheese if desired
Yield: 8 tacos
