Casa Fiesta Beef Fajita Tacos

  1. In a gallon size storage bag, combine the 2 Casa Fiesta Fajita mixes with 8 oz of water, beer or wine and place the skirt steak in the bag and marinade for 2 hours.
  2. In a saucepot, add the refried beans, chicken broth, cumin, and the adobo sauce from the chipotle peppers and heat to a simmer.
  3. After marinating, grill the skirt steak until the internal temperature has reached 165 F.
  4. Slice thinly or cube the skirt steak and set aside.
  5. Warm the tortillas on the grill or in the oven and assemble the tacos by spreading the refried beans on the inside of the tortilla, adding the steak, salsa, lettuce, tomatoes, sour cream, and Mexican Cheese, if desired.
Yield: 8 tacos
