Cajun Injector French Onion Smoked Meatloaf

  1. Set the temperature setting to 225°F and the timer for 3 hours on smoker.
  2. Once smoker is ready, combine all ingredients in large bowl and mix by hand until thoroughly combined.
  3. Place in aluminum loaf pan with a bunch of holes poked in the bottom, place pan on a rack in the Cajun Injector Electric Smoker pour water in drip pan and close door.
  4. Place 1/4 cup of oak pellets into wood pellet chute, and ensure that no pellets remain in chute after loading.
  5. Once the pellets start to smoker, commence timing the smoking process. Smoke meatloaf for 1 hour 45 minutes, meatloaf is cooked when internal temperature reaches 170° F. Let the meatloaf rest for 15 minutes before serving.
