Corn Casserole

Ingredients

  • 2 lg  Eggs
  • 1 1/2 cups  Sour Cream
  • 2 cups  Corn, heated
  • 2 cups  Monterey Jack Cheese, shredded
  • 1/2 cup  Breadcrumbs
  • 1 4 oz can  Casa Fiesta Diced Green Chilies
  • 1/2 tsp  salt
  • 1/4 tsp  Pepper
  • 1/2 cup  Cheddar Cheese, shredded

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine eggs and sour cream; stir in corn and next five ingredients.
  3. Pour into a greased 2-quart baking dish.
  4. Bake, uncovered, for 30 minutes.
  5. Sprinkle with Cheddar Cheese and bake additional 5 minutes.
  6. Remove from oven and let stand 10 minutes before serving.
Yield: 2 quart casserole dish
Preptime: 10 minutes
Cook time: 35 minutes
