Green Chilies and Cheese Cornbread

Ingredients

  • 1 cup  Cornmeal
  • 1 cup  milk
  • 1/2 cup  Oil
  • 2 ea  Eggs, slightly beaten
  • 1 4 oz can  Casa Fiesta Diced Green Chilies
  • 1 can  Cream Style Corn
  • 1 lg  Onion, grated or finely chopped
  • 2 cups  Cheddar or Monterrey Jack Cheese, grated
  • 1 tsp  Baking Powder
  • 1/2 tsp  salt

Directions

  1. Mix cornmeal with milk, oil, corn, baking powder, eggs and salt.
  2. Pour half of the mixture into a greased baking dish or cast iron skillet.
  3. Sprinkle onion, cheese and green chilies over mixture (careful to avoid the edges).
  4. Pour remaining cornmeal mixture on top.
  5. Bake in preheated 350 degree F oven for 1 hour.
Yield: 1 casserole or skillet
Preptime: 5 minutes
